From a vineyard situated to the South East of Cowaramup, the wine underwent wild fermentation in barrels without temperature control. This quirky fermentation process, including full solids, occurred primarily in older barriques with a couple of new ones thrown into the mix. Following this, the wine was left to rest on its fine lees for 10 months in barrel before being bottled without filtration.
Nick, the maker, and Sarah, the master, craft small-batch, single-vineyard, low-intervention wines of texture and character from Margaret River, employing unconventional varieties and techniques. Their approach is gentle, steering clear of fining and filtering, and instead, they prioritize sensitivity to the wines' needs over imposing pre-existing recipes.
