Blue fruits lead the charge—mulberry, satsuma plum and wild berries—layered with cracked white pepper, anise and a subtle savoury edge of game and Aussie bush. The palate is medium-bodied and beautifully transparent, with juicy fruit at its core, fine-boned tannins and a vibrant line of acidity driving it long. Whole-bunch fermentation brings a gentle stalky spice and structure, finishing saline, mineral and quietly powerful.
Timo Mayer is one of the cult figures of the Yarra Valley, known for his uncompromising, minimal-intervention approach and signature use of whole-bunch fermentation. Working from his steep, high-altitude Bloody Hill vineyard, Mayer crafts wines that are vivid, energetic and deeply expressive of site. Originally from Germany, his philosophy—“bring the vineyard to the bottle”—results in small-batch wines that are pure, textural and unmistakably individual.
