Mario Rovira is a dynamic winemaker from Bierzo, renowned for his natural, minimal intervention wines. He has a particular passion for Palomino Fino, which he also cultivates in Bierzo. This wine, however, hails from Cádiz.
100% Palomino Fino, unfortified, and aged for 7 months, with three of those months under flor.
Grown on the Albariza soil of Pago de Balbaíno, this Andalusian wine is rich in flavor. Its golden hue showcases classic saline and mineral characteristics, driven by chalky and limestone notes. On the palate, it is assertive, with excellent acidity and fine Palomino fruit flavors.
If you love dry sherry, this wine is a delightful option, offering lower alcohol content and more pronounced fruit characteristics.
