Drink 2019 to 2029 - Huon Hooke
The objective behind this wine is to delve into innovative viticultural and winemaking methodologies, all while preserving the vineyard's intrinsic character. In terms of viticulture, a novel approach known as shoot selection has been adopted, which refines the conventional method of shoot thinning previously employed in the vineyard. This technique entails selectively removing shoots to optimize canopy structure, thereby mitigating disease risks, enhancing sunlight exposure within the canopy, and ultimately yielding more concentrated fruit flavors.
Regarding winemaking, a significant aspect involves the utilization of whole bunch fermentation sourced from our latest Pinot plantings, followed by maturation in new French hogsheads. Approximately one-third of the wine undergoes this process, complemented by the remainder sourced from destemmed fruit of younger vines. Notably, two barrels of the latter were employed, each undergoing maturation in seasoned French oak barrels.
In 1983, Ian and June Marks discovered their vineyard site after an extensive search spanning nearly every wine region in Victoria. Situated with views of Mt Donna Buang, framed by the Warburton ranges, boasting red soil, and benefiting from a coveted north-easterly aspect, it proved to be an ideal location for cool climate winemaking. Gembrook Hill emerged as a pioneer among the 'second wave' of Yarra Valley vignerons, and today stands as one of the oldest vineyards in the Upper Yarra sub-region.
