Selective harvest by hand during the 2nd half of October. Destemed. Without sulphurisation of the grape must or juice. Fermented with wild yeast. Malolactic fermentation. Matured in stainless-steel tanks on the lees. Yellow stone fruit and hints of wild herbs, a touch of rhubarb, minerallity. Juicy, compact, well balanced acidity, subtle extract sweetness, long finish with fresh apricot, great aging potential.
